Sel de Terre  “salt of the earth” reflects both the wine’s mineral edge and Halite’s philosophy of honesty, purity, and connection to place. This Sauvignon blanc depicts that perfectly with a soulful mix of classic and modern winemaking capturing the essence of site.

Vineyard
100% Sauvignon Blanc sourced from the biogro certified Grava Vineyard farmed by Alistair and Karla on the dry river flats 8km south of Martinborough. The vines are grown on the terraces of the Ruamahanga river providing alluvial deposits making silt loam soils.

Winemaking
The fruit was hand-picked, whole bunch pressed and naturally fermented in large format oak. It was then transferred to stainless steel where it remained on lees to build texture, while the wine was kept unadorned to let the vineyard shine.

Tasting Notes
The nose shows flinty earth, pineapple and lemongrass notes. The palate is creamy and textural, with delicate florals, green apple and savoury undertones. A refreshing, dry, saline finish lingers.

Unfined. Unfiltered. Vegan friendly. May throw a harmless deposit in the bottle.
